Preventing Food Borne disease – E- coli Infection

Food borne disease is one of the growing global public health problems. It happens after one consumes food or beverage that is contaminated with microorganisms or chemicals. With the recent outbreak of E-coli infection which began in Germany, people are concerned about preventive actions.

What is E-coli?
E-coli is bacteria commonly found in the intestine of human and animals. Most of the strains are harmless but some strains are able to produce toxin in which they are commonly known as Shiga Toxin Producing E-coli (STEC). The toxin produced not only cause bloody diarrhea but also hemolytic uremic syndrome (a disease that destroys red blood cells and cause acute kidney failure) which can be fatal.

Who gets STEC infection?
Anyone of any age can become infected with STEC after consuming contaminated food or drink. However, children and the elderly are more likely to develop serious complications. What happens in the body after the STEC enter the digestive system?
After they are swallowed, there is an incubation period before the symptoms of illness begin.  The incubation period for STEC is three to eight days. During the incubation period, the microbes pass through the stomach into the intestine, attach to the cells lining the intestinal walls, and begin to multiply there.  They stay in the intestine and produce Shiga toxin that is absorbed into the bloodstream.

What are the symptoms of STEC infection?
The symptoms include severe stomach cramps, fever, bloody diarrhea, low platelet count and vomiting. Most people get better within 5 to 7 days, but some may go on to develop deadly hemolytic uremic syndrome which is characterized by hemolytic anemia (toxin substance destroy red blood cells) and acute renal failure.

How to prevent infection of STEC?
• Wash hands thoroughly with soap and rub for at least 20 seconds especially after using toilet and before preparing food. Use hand sanitizer if there is no water and soap supply.
• Wash fruit and vegetables thoroughly before eating.
• Avoid eating raw vegetables.
• Avoid travelling to countries with outbreak. You should seek medical advice immediately if you are not feeling well after returning from your trip.
